Expert Advice on Spring Rolls
- Veggies: Add any vegetables you want. Carrots, napa cabbage, bok choy, leeks, green or purple cabbage, broccoli, bell peppers, baby corn, french beans, and spring onions are all good choices. Edible mushrooms, such as a button or cremini mushrooms, add flavor to the stuffing.
- Protein: Add scrambled tofu or bean sprouts to the stuffing for more protein. You can also add scrambled paneer for a vegetarian option (Indian cottage cheese).
- Spicy: My recipe is not spicy at all. To make the filling more spicy and pungent, add some finely chopped green chilies.
- Wrappers: The recipe works well with both homemade and frozen spring roll wrappers. Thaw frozen wrappers at room temperature before wrapping and rolling. To keep them from drying out, wrap them in a damp towel.
- Deep frying: When deep frying, keep the temperature moderate (180 to 190 degrees Celsius/356 to 374 degrees Fahrenheit). The spring rolls will absorb more oil if cooked on low heat. On very high heat, they will quickly brown or burn. These rolls can also be shallow fried.
