- 2 boneless, chicken breast
- 2 cups plain breadcrumbs
- 0.5 teaspoon salt
- freshly cracked pepper
- 1 teaspoon garlic powder
- 4 tablespoons neutral oil
- 0.67 cup Greek yogurt
- 1 teaspoon smoked paprika
- 6 tablespoons water

Instructions
1. Preheat the oven to 425 degrees Fahrenheit. Place one or two wire cooling racks over a baking sheet to hold the nuggets while they bake.
2. Combine the breadcrumbs, garlic powder, smoked paprika, salt, and freshly cracked pepper in a large shallow bowl (about 5 cranks of a pepper mill). Mix these ingredients until they are evenly combined.
Drizzle the oil over the breadcrumb mixture and stir to coat the breadcrumbs. The breadcrumbs should resemble wet sand.
3. In a separate small bowl, combine the Greek yogurt, salt, and water and whisk until smooth. The yogurt should have the consistency of buttermilk or heavy cream. It should be thick enough to completely cover the chicken.
4. Trim any excess fat from the chicken breast before cutting it into 3/4 to 1-inch pieces. You should get 22-24 pieces from a 2/3 pound chicken breast.
5. Dip each chicken piece into the yogurt slurry, then roll it in the seasoned breadcrumb mixture until completely coated. Place each coated nugget on the baking sheet's wire cooling rack.
6. Once all of the chicken pieces are coated, place them on a baking sheet and bake for 23-25 minutes, or until the breading is browned on the edges.
7. Remove the chicken nuggets from the oven and set aside for 3-5 minutes before serving with your preferred dip.
