Perfect and simple HOMEMADE CHICKEN SHAWARMA recipe that tastes exactly like Pakistani street shawarma.
Chicken Shawarma is very famous all through the Center East, especially in Lebanon. It is also a popular street food in Pakistan and India. This simple shawarma can be made at home as a side dish for brunch or as an evening snack.
This Middle Eastern chicken shawarma is bursting with flavorful chicken that has been seasoned with a delectable array of spices. It makes an excellent lunch or dinner that everyone will enjoy! I enjoy a good chicken dish, and this shawarma does not disappoint! What exactly is Chicken Shawarma?

If you've never had (or heard of) chicken shawarma before, you're in for a treat! This chicken is seasoned with my delicious shawarma seasoning.
The seasoning mixture contains garlic, cumin, cinnamon, and a few other ingredients that combine to create a delicious flavoring blend. The spice can be used as a rub or marinade on vegetables or any type of protein. My favorite application is on chicken! 

To make a marinade, I combine the seasoning with lemon juice and oil. I soak my chicken for at least an hour (soaking it overnight, if you have the time, really infuses the flavour into your meat!). The chicken is then grilled (making this the ideal recipe to kick off summer grilling season!) and placed in a pita with some other vegetables. The combination of cooked chicken and fresh, crunchy vegetables is divine! This is great for lunch or dinner! But, whatever you do, double this recipe so you can eat the leftovers all week!

INGREDIENTS

  • 4 Chicken thighs
  • 4 x Pita breads



 For the Marinade

  • ½ cup plain normal yogurt
  • 1 tsp cumin powder
  • 1 tsp smoked paprika
  • ½ tsp cinnamon
  • ½ tsp cardamom
  • 1 tsp coriander
  • 1 tsp dried bean stew pieces
  • 3 garlic cloves
  • 3 tbsp Olive Oil
  • 1 lemon squeeze
  • Salt and dark pepper

For the sauce

  • 1 cup plain yogurt
  • 2 tbsp tahini
  • 1 garlic clove, finely ground or minced
  • Salt and pepper
Filling
  • Dill cucumber
  • Roasted Capsicum cuts
  • Crunchy lettuce leaves (Ice shelf)

Steps


• Step 1

Freeze the chicken thighs until they are half-frozen. This will aid in making the slices thinner.
This step is optional; it simply aids in the cutting of thinner pieces. Once half frozen, remove from the freezer and thinly slice each thigh with a very sharp knife.


• Step 2 

Combine all of the chicken pieces in a mixing or marinating bowl. Combine the yoghurt, smoked paprika, cardamom, cumin powder, coriander, dried chili flakes, cinnamon, 3 garlic cloves, olive oil, salt, and black pepper in a mixing bowl. Grate the zest of one lemon with a microplane, then squeeze in the juice. Mix thoroughly to coat each piece. Refrigerate for 2 to 12 hours. 


Step 3

Remove the chicken from the fridge 30 minutes prior to barbecuing. Prepare a baking tray or sheet pan lined with foil. Place an oven-safe rack on top to catch the chicken juices. This prevents the chicken from stewing. Lightly grease it with olive oil, then top it with your chicken mixture. Spread the pieces out evenly, leaving enough space between each one. Place your grill or broiler element on full heat and the closest setting. Grill the chicken for 5 minutes per side, or until the rough edges show signs of dark browning. 


• Step 4

In the meantime, make the sauce by combining the yogurt, tahini, and garlic. Season with salt and pepper to taste. When storing, keep it refrigerated.


• Step 5

 To assemble, warm your pita bread by wrapping it in foil and heating it in the oven.
Or, like me, simply toss it on the flame a few times. You don't need to toast it; simply warm it up; the bread should be soft rather than crispy. Spread the garlic sauce all over the bread, then top with the torn lettuce leaves, bell pepper, dill cucumber, and hot chicken pieces. Wrap tightly in paper and serve right away.

This chicken shawarma is extremely versatile and can be used in various dishes!
Here are some more ways to use this chicken!

• For a salad: I'm always on the lookout for flavorful and delicious protein to serve on a bed of greens, and this chicken is ideal.
Because it has a lot of flavour on its own, you can keep it simple by adding just some baby spinach or mixed greens and carrots and cucumbers.
Mix it all together and you'll have a salad that will actually fill you up! 

Main course: If you want to grill this chicken shawarma as your main course, go ahead!
Serve it with a salad, some flatbread, and possibly some rice!

• In a sandwich: I like to put this chicken on pita bread and top it with veggies.Red onions, lettuce, and tomatoes are some of my favorites.Make it your own; it goes with almost everything! 

 

Can You Grill This Chicken Shawarma Recipe? Of course!

After marinating, this recipe can be grilled as whole thighs or breasts, or skewered.
Grill until golden brown and cooked through (about 10-15 minutes).
You can also marinate and grill sliced vegetables like red onion, bell peppers, and mushrooms.

Storage, Freezing, and Reheating Instructions

This Chicken Shawarma recipe is ideal for meal prepping ahead of a busy week or freezing to eat later.

• Refrigerate leftover chicken in an airtight container for up to four days.  

• Freeze cooked and cooled chicken for one month in a freezer-safe, airtight container or plastic bag.
You can also skip the marinade stage and freeze the raw chicken thighs and marinade together for up to 3 months. Allow cooked or raw frozen chicken to thaw overnight in the refrigerator or at room temperature on the counter.

• Microwave thawed or chilled cooked chicken for 2-3 minutes, or until warmed through.
Allow raw chicken to completely thaw before assembling for cooking.
