INGREDIENTS

  • 1 medium cauliflower, peeled and cut into florets
  • 450g / 2 large russet potatoes, cubed 200g
  • 1 small broccoli head, cut into florets
  • 1/2 teaspoon black mustard seeds
  • 1/2 teaspoon crushed coriander seeds
  • 1 medium peeled and finely chopped onion
  • 3 minced garlic cloves
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • salt (according to taste)
  • 4 to 8 tbsp water
  • 1/2 teaspoon chili powder
  • 80g / 1 medium tomato, finely diced 


METHOD


1)Heat the oil to a low to medium temperature.

2) Cook for a few seconds after adding the mustard seeds, cumin, and coriander.

3) Stir in the onions, garlic, and ginger and cook for a few minutes, or until the onion is translucent.

4) Add the tomato and cook until the mixture is paste-like.

5) Stir in the chili powder and turmeric, as well as four tablespoons of water.
Combine thoroughly.

6) Stir in the cauliflower, broccoli, and potatoes, and season with salt to taste.
Mix thoroughly to coat with the paste.

7) Reduce the heat to low and cover tightly.

8) Simmer for 30-45 minutes, or until the potatoes are tender.

9) Check on a regular basis, carefully mixing each time and adding more water as needed.
